Triticum spelta

Spelt is a hulled wheat: the husk stays tightly attached after threshing and requires an extra dehulling step. It contains gluten and is not a wheat-free grain.

UMaine trials found meaningful differences among winter spelt varieties in height, lodging, yield, and protein. Maine farms have successfully grown winter spelt for both grain and straw.1

In the UMaine trial, later planting reduced yield but tended to raise grain protein. That tradeoff makes planting date part of the ingredient’s eventual composition, not merely a farm-calendar detail.1

Spelt belongs in the same genus as wheat and shares its gluten-forming proteins.

Its covered grain was once an advantage under marginal conditions but became a processing disadvantage beside free-threshing wheat. Spelt spread from the Middle East into Europe, remained important through Roman times, and persisted especially in parts of Germany and Switzerland after other wheats displaced it; it reached the United States in the 1890s.2

Maine’s trials make clear that “local spelt” is not one uniform ingredient. Winter varieties differ in height, lodging, yield, and protein, and planting date changes both stand establishment and final harvest. Winter spelt is seeded in the fall, survives as a young plant, and resumes growth in spring; that schedule fits the Northeast but also exposes the crop to winterkill, wet weather, and Fusarium pressure.13

The hull is central to spelt’s identity. It protects the kernel in the field but has to be removed after threshing, adding a processing step that free-threshing wheat avoids. Once dehulled, spelt can be treated as a whole grain or milled, but the grain’s relatively soft, extensible gluten behaves differently from strong bread wheat. It is still wheat and still contains gluten, so its appeal is flavor and regional grain diversity, not a wheat-free alternative.12

That combination of a protective hull, variable protein, and nutty grain flavor is why spelt can move between porridge, flour, and ferments without becoming interchangeable with ordinary wheat.
