Rhapsody Natural Foods is a small fermented food producer located on a homestead in Cabot, Vermont. Founded by Elysha and Sjon Welters, the company makes tempeh, natto, miso, and koji in small batches using organic soybeans. They also sell dried koji, which we source as a convenient inoculant for garums, amazake, and related ferments.
