Pumpkin seeds are the mature seeds of Cucurbita fruits. Hull-less “pepita” types and ordinary hulled pumpkin seeds are related but visually quite different.1
The seed sits inside the fibrous cavity of a mature squash or pumpkin. Its relationship to squash blossoms is direct: both are parts of the same cucurbit plant.
The white part around an ordinary pumpkin seed is a tough hull; the green kernel lies inside it. Hull-less or “naked-seeded” pumpkins carry a mutation that reduces cellulose and lignin in the seed coat, leaving only a thin covering around the kernel.2
The green kernel contains no starch and may be roughly half oil and more than a third protein. Its color combines chlorophyll with yellow-orange carotenoids. Oil pressed from raw seeds is green, while heating and wetting the meal extracts more carotenoids; the resulting oil can look dark brown in a bottle yet emerald green when spread in a thin layer.3
In the Northeast, pumpkin seed is a useful way to think about the whole Cucurbita harvest rather than the carved fruit alone. A mature pumpkin or winter squash leaves behind a cavity packed with seeds and fibrous placental tissue; the seeds are food in their own right, and the stringy material around them carries moisture and flavor into whatever preparation follows. Seed size, hull thickness, and the degree to which the coat adheres to the kernel vary substantially among cultivars, which is why a hull-less oilseed pumpkin behaves differently from a large carving pumpkin even though both supply pepitas.
The seed’s flavor develops through browning reactions during heating, while its oil carries a soft, nutty aroma and can become rancid if stored warm or exposed to air for long periods.3 That combination of concentrated fat, protein, and a thin edible coat gives pumpkin seeds a different culinary role from the starchy flesh of the squash: they contribute crunch and roasted depth, while the kernel’s green pigments can tint ground seed or pressed oil.3
