Peanut is a legume, not a tree nut, and its growth habit is odd enough to feel almost fictional the first time you see it. After flowering above ground, the plant pushes its thin woody fruit capsules down into the soil to mature, which is why the pods are dug rather than picked even though they are neither roots nor tubers.12

That habit helps explain why peanuts sit so comfortably between bean, seed, and nut in cooking. The crop was domesticated in South America, spread through Africa and Asia after the sixteenth century, and became especially important as an oil and protein crop wherever warm weather made high yields possible.2 In the United States, peanuts arrived in mainstream cooking relatively late, but they are now as at home in boiled roadside snacks and peanut butter as they are in sauces, stews, and sweets.2

Raw peanut tastes greener and beanier than people expect, but roasting redraws it completely.3 Hundreds of volatile compounds have been identified in roasted peanuts; the familiar aroma is built from nutty pyrazines, sulfur compounds, and smaller fruity, floral, fried, and smoky notes.3 That same chemistry is fragile, so stale peanuts lose those pyrazines first and drift toward painty, cardboard flavors, which is one reason fresh roasted peanuts taste disproportionately better than old ones.3

The peanut’s “nutty” character is therefore largely a cooked aroma rather than a fixed identity present at full strength in the raw seed. USDA research describes roasting as a transformation of compounds already present in the raw peanut into new molecules associated with the familiar roast-peanut note; sweetness rises modestly as roasting proceeds, while bitterness and astringency become more noticeable when the roast is pushed too far.4 The seed’s high oil content makes that flavor valuable but also gives stale peanuts a particularly obvious downside, since oxidation turns a formerly warm, savory ingredient flat and paint-like.
