Reynoutria japonica (also published as Fallopia japonica)
Japanese knotweed is an invasive perennial from eastern Asia whose young spring shoots have a tart, rhubarb-like character. UMaine describes it as widespread and extremely difficult to control in Maine.1 It is related to rhubarb, buckwheat, and other members of the knotweed family rather than to bamboo, despite the hollow, jointed stems that give it a bamboo-like appearance.2
The edible stage is the youngest, most tender shoot. Mature stems become woody and the plant’s ecological behavior matters: harvesting should never involve deliberately spreading or transplanting it.1
The spring shoot is the food-bearing tip of a plant whose mature architecture is much tougher: hollow, mottled stems rise six to fifteen feet, with a deep taproot and an extensive rhizome network below ground.3 That contrast is why the ingredient is seasonal in a meaningful sense. The tender stage passes quickly as the stems elongate and the leaves unfurl, while the underground plant remains capable of sending up new clonal shoots from surprisingly small fragments.3 Any food interest has to be matched by careful identification and disposal of scraps away from soil or compost.
Its hollow, jointed stems explain the old nickname “Mexican bamboo,” though it is unrelated to bamboo. Tiny fragments of its underground rhizomes can produce new plants, making careless disposal a real propagation risk.45 The same underground network that lets the plant return after cutting also makes it a poor candidate for casual harvesting from a patch: any trimmed stem or root material left in damp soil can help establish another colony.
The tartness links it to rhubarb, and the two are relatives in the knotweed family, Polygonaceae.2
