Inspired by an old post from the Nordic Food Lab, we’re testing the drying of fruits and vegetables for use as spices in Northeastern cuisine.

For a first test, we dried cucumber at 110°F in small pieces until completely desiccated. The result, as described by NFL, was sweet and sour, somewhat spice-reminiscent. Our result came out less dark, so perhaps a higher dehydration temperature would be necessary. The result is interesting but, at the moment, costly as a preservation application for a vegetable otherwise easily preserved.

This could be an interesting application for cucumber peels and waste.

Cucumber is mostly water, so drying changes it more radically than drying a dense root or a seed. The fresh fruit’s cooling crispness collapses, while the remaining sugars, acids, aroma compounds, and green skin notes become concentrated in a small amount of brittle material. That is why the dried pieces can read more like a seasoning than like reconstituted cucumber. Extension guidance describes dehydration as removing enough moisture to slow microbial growth and enzymatic reactions, but cucumber is an unusual candidate: a South Dakota Extension preservation sheet notes that the National Center for Home Food Preservation does not recommend drying cucumbers as a standard home-preservation route.12

The notebook’s test is therefore best understood as a flavor experiment and a way to investigate trim, not as a general preservation recommendation. Peels may contribute more color and aromatic bitterness than the watery center, while seeds add a softer, faintly nutty note before they dry hard. The contrast between a pale, less-dark result and the deeper flavor described by Nordic Food Lab makes temperature, piece size, and final dryness important variables to record rather than assumptions to carry from one batch to the next.

Cucumber’s unusually high water content is the central food fact behind that transformation: raw cucumber is roughly 95% water, so a small amount of remaining dry matter carries most of the flavor after dehydration.3 The fruit is botanically a pepo, with a rind, fleshy interior, and seed-bearing center, which means the peel and seeds are not incidental waste but different materials with different drying behavior.4 For a future batch, the notebook’s interest in peels is especially practical because thin peel dries more readily than thick pieces of flesh, while the center can remain leathery even after the exterior feels brittle.
