Celtuce is a stem form of cultivated lettuce, Lactuca sativa, selected for its enlarged crisp stalk rather than a leafy head. It is also called stem lettuce, and the thick stalk is usually peeled before being sliced or cooked. Like other lettuces, it exudes white latex when freshly cut. The stalk is the characteristic food part, while the leaves remain usable but are secondary to it.1
That stalk gives celtuce a different balance from ordinary leaf lettuce: there is more crisp, watery vegetable structure to break down, and less of the soft leaf that quickly turns grassy when blended. The plant is still lettuce, though, so the flavor carries the mild bitterness and green aroma of the genus. Celtuce is well suited to a cool-season Northeast garden because lettuce prefers cooler growing conditions; the crop’s challenge is getting enough time for the stem to enlarge before hot weather or a hard fall freeze.2
In this page’s juice, the white vinegar was used to slow browning rather than to turn the celtuce into a pickle. The quick oxidation is a reminder that the cut surface is still a living lettuce tissue, not a naturally stable juice ingredient. The stem’s clean, grassy character and the leaves’ more familiar lettuce flavor are therefore worth treating as two related but distinct foods.
Celtuce is day-length sensitive, so the same tendency to bolt that enlarges its edible stem can also close the harvest window: long days encourage the flower stalk to elongate, and the plant becomes more bitter as it moves toward flowering.3 That gives the juice experiment a useful seasonal variable beyond oxidation. A younger stalk may contribute a cleaner, less bitter green flavor, while a later stalk may bring more latex, firmer fiber, and a stronger need for peeling and straining. The stalk is not merely a thick leaf; it is the crop’s selected storage and support tissue, which is why it stays crisp enough to register as a separate vegetable even though the plant is lettuce.34
