As part of our exploration of presscakes and byproducts, we’ve been exploring the utilization of oil presscakes. We received these presscakes from Hudson Valley Hops and Grains.

Camelina (Camelina sativa), also known as false flax, is primarily an oilseed, pressed for a rich, chemically stable, non-neutral oil. It is also being studied as a lower-carbon biofuel. Penn State describes it as a short-season, cool-climate crop with potential in Pennsylvania, including spring production in roughly 85–100 days.1

Like flax, camelina seeds produce a hydrocolloid mucilage. In our testing, the presscake produces a weaker mucilage than flax, but the effect is noticeable nevertheless.

The cake is the compressed seed meal left after oil is removed. It is not simply a neutral flour: the remaining protein, fiber, and seed compounds give it a distinctly savory, slightly mustardy character. Research on camelina oilseed cake describes it as a protein- and fiber-containing byproduct with enough structure to form films, which helps explain why a ground presscake can thicken or bind as well as contribute flavor.2 The seed’s mucilage is another part of that behavior; it hydrates into a slippery gel, although in our testing it was weaker than flax mucilage.

Camelina is an old oilseed whose modern appeal comes partly from its ability to produce oil with relatively modest water and nutrient demands. It belongs to the mustard family, but the culinary identity of the presscake is closer to a concentrated seed meal than to a leafy brassica. That makes it interesting in a Northeast larder: it can preserve some of the character of a locally grown oil crop after pressing rather than reducing the crop to oil alone. The seed is small and the pods sit high on the plant, features that make the crop unusually compatible with mechanical harvest for a minor oilseed.31

Like other presscakes, it retains substantial protein and fiber that may suit enzymatic processing and fermentation into products such as miso and garum. The mucilage suggests a separate set of culinary uses, while the toasted-seed flavor suggests that excessive heat could easily push it toward bitterness.

We’ve begun to explore its potential as a stabilizer in ice cream, an egg substitute in plant-based cakes and baked goods, and for thickening sauces and stocks.
